STUFFED PEPPERONI CHICKEN





Tonight for dinner I wanted to take my fiances love for pizza and figure out a way to incorporate it into a chicken recipe and viola! Pepperoni Chicken was born. I started with two chicken breasts and cut a pocket into them and stuffed them with mozzarella and a few slices of pepperoni. I added some s/p to season the flour and put Italian seasoning in the bread crumbs.Then I dredged them ( holding them together so nothing fell out!) While doing this I heated some olive oil until it got so hot that when I sprinkled some bread crumbs in they started to dance. I then cooked each side for about 3 min. Then put them into an oven at 350 for about 25 minutes. Some of the cheese did ooze out a little but it was no big deal I just shoved it right back in and we were good to go! Enjoy!
