Potatoes O'Brien Frittata






Happy Saturday! Today I wanted to make us a brunch that was really easy and really flavorful! We both love cheese, bacon, and potatoes so I came up with this dish. It does take some time, but the beauty of this frittata is that pretty much all cooks in the oven. The only thing I had to cook on the stove was the turkey bacon. And who doesn't like to start the weekend off with the smell of turkey bacon filling the house! 

The first thing I did was sprinkle s/p all over the potatoes O'Brien on a cookie sheet that was covered with oil. Cook the potatoes in the oven at 400 degrees for about 20 min. While the potatoes are cooking, get the turkey bacon going on the stove and then lay them on some paper towel lined plates and let them rest. Stir up the eggs, milk, and s/p in a bowl. Now we have to combine every thing into a buttered pie dish. (I used a 8 1/2 inch) Potatoes go in first, then layer in the cheese and chopped up bacon. Then pour in the egg mixture and sprinkle a little more cheese. Lastly top off with the chopped green onions.  Now throw that sucker in the oven and let it cook away for about 30 min.  Sit back with a cup of coffee (or Bloody Mary!) and let the oven do the rest of the work!

INGREDIENT LIST:
5 eggs
2 T of milk
Large hand fulls of shredded sharp cheddar
half a bag of Ore-Ida Potatoes O'Brien
chopped green onion
Salt / Pepper
4 strips of turkey bacon
butter to grease your pie plate
oil for your cookie sheet
