SHRIMP BRUSCHETTA


My first post! So excited to start sharing with everyone! This is my bruschetta remake, super easy and fast to make. One night for dinner in on a Friday night I wanted to make my fiance and I something fabulous but quick after a long day of work. So all I had to do was make my bruschetta like usual but add in some baby shrimp. My recipe:

* 3 roma tomatoes chopped
* 1 large red onion
* french bread
* generous amount of s/p 
* bunch of basil chiffionade 
* baby shrimp I just eye balled it from the seafood counter.
* balsamic vinegar Italian dressing (secret weapon)! 

So basically I prepped the tomatoes, onion, and basil while the shrimp boiled in heavily salted water.  Then I put every thing together in some tuper wear gave it all a good bath in the dressing closed the lid of the tupperwear and gave it all a good shake and put it in the fridge for a few minutes to let it come together. I then put a few slices of the bread under the broiler with a little garlic rubbed on it. And there you have it!! Serve up some pasta as a main, pour some white wine and your off to a great Friday night in!
